Bulgur, Chicken and Salsa Verde Casserole


The next time you feel like cooking a cozy dinner without spending too much time in the kitchen, give this delicious casserole a try. Use an oven-proof skillet or frying pan if you’ve got one to save yourself some time when cleaning up!



Bulgur, Chicken and Salsa Verde Casserole 
1 cup dried bulgur
2 cups water
1 pound cooked chicken breast, shredded
8 ounces canned diced green chiles
12 ounces salsa verde
2-3 cups shredded cheese (I used a mix of aged white cheddar and pepper jack)
Possible garnishes: avocado, cilantro, green onions

Preheat oven to 350 degrees.

Bring water and bulgur to a boil in a pot. Reduce heat, cover and simmer for 12-15 minutes or until tender. Drain off any extra liquid.

While bulgur is cooking, combine combine chicken, salsa and chiles and in a skillet or frying pan. Warm the chicken mixture up over medium heat. Stir in cooked bulgur until everything is mixed. Remove from heat and transfer mixture to an ovenproof dish if needed. Top with shredded cheese, cover with aluminum foil or an oven-proof lid, and bake for 20 minutes. Remove dish from oven, top with garnishes, and serve.

Wild Rice Casserole with Chicken, Mushrooms and Broccoli


Nothing innovative about this casserole, but damn, is it good.


Wild Rice Casserole with Chicken, Mushrooms and Broccoli 
4 cups water 1 cup wild rice, rinsed
1 tablespoon olive oil
2 celery stalks, diced
2 carrots, diced
1 medium yellow onion, diced
½ pound cremini mushrooms, chopped
1 tablespoon fresh thyme
1 teaspoon ground mustard
1 teaspoon poultry seasoning
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups low-sodium chicken broth
½ cup nonfat milk
½ pound broccoli crowns, chopped
1 pound cooked, chopped chicken meat
Salt and pepper
1 cup grated sharp cheddar

Preheat oven to 350 degrees.

In a medium saucepan, bring rice and water to boil. Reduce heat, cover and cook rice until tender, about 40 minutes or so. Drain well.

While rice is cooking, warm olive oil in large skillet over medium heat. Add celery, carrots, onion and thyme and sauté for 5 minutes, stirring occasionally, until vegetables start to soften. Stir in the mushrooms, ground mustard and poultry seasoning and sauté for another 2-3 minutes. Add butter, flour and chicken broth and bring to a simmer. Cook mixture for 5 minutes, stirring occasionally, until sauce thickens a bit. Stir in milk and continue simmering for another 5 minutes. Remove from heat, season with salt and pepper, and stir in broccoli, chicken and rice. Transfer mixture to a 9-by-13 glass baking dish, top with cheese, and bake, uncovered, for 20 minutes. Remove from oven and enjoy.

Salsa Chicken and Rice Casserole


Yes, I know there’s a good chance it’s hot where you are and the last thing you want to think about is firing up the oven, but hear me out. You won’t need to spend much active time in the kitchen to put this delicious dinner together -- start the chicken in your slow cooker before you go to bed and you’ll have a pot full of delicious, shredded, salsa-y goodness waiting for you in the morning, which you can then stash in the fridge until you’re ready to make dinner. Cook the rice while preheating the oven, quickly stir everything together once the rice is done, plunk everything into your trusty Pyrex baking dish, and pour yourself a frosty beverage to enjoy during those 20 minutes of bake time. No biggie, right?

Salsa Chicken and Rice Casserole 
1 pound boneless, skinless chicken breast
1 ½ cups of your favorite tomato-based salsa
¾ cup white rice
1 ½ cups water
¾ cup corn kernels
4 ounces sliced black olives
1 15-ounce can black beans, drained
1 7 ¾ ounce can El Pato tomato sauce with jalapeño
7 ounces diced green chiles
1 teaspoon cumin
1 teaspoon chili powder
2 cups shredded sharp cheddar
⅓ cup sliced green onions

Combine chicken and salsa in slow cooker and cook, on low, for 8 hours. Shred chicken with fork and knife and stir to blend with salsa. Preheat oven to 350 degrees. Bring water to boil in large saucepan. Add rice, reduce heat, cover and cook until rice is tender. Remove from heat. Stir in chicken and salsa mixture, corn, olives, beans, tomato sauce, chiles, cumin and chili powder until everything’s combined. Transfer mixture to 9-by-13 baking dish. Top with shredded cheese, cover with aluminum foil and bake for 20-25 minutes. Garnish with green onions and serve.

Sticking to resolution with superbly smoky soup

This is how Milk Pail Market, one of my favorite Mountain View grocery stores, encouraged visitors to kick off 2015:


That’s a resolution I can get behind every year, and sure enough I recently picked up some fantastic oak-smoked cheddar from these guys. Great on its own, but also quite delightful melted into this soup.


Smoky Cheddar Potato Soup 
1 tablespoon olive oil
2 tablespoons minced garlic
1 large yellow onion, diced
1 teaspoon smoked paprika
½ teaspoon cayenne pepper
2 red bell peppers, seeded and diced small, ¼ cup reserved
2 pounds russet potatoes, peeled and diced
48 ounces vegetable broth
2 cups grated smoked cheddar
Salt and pepper, to taste

Warm olive oil in a large pot. Add garlic, onions, smoked paprika, cayenne and bell peppers and cook over medium heat, stirring occasionally, for 3-4 minutes. Increase heat, add potatoes and broth to pot, cover and bring to a boil. Reduce heat and simmer for 30 minutes, or until potatoes are tender. Using a ladle or glass measuring cup, scoop three cups of soup into blender. Puree soup and stir back into the pot. Remove soup from heat and stir in cheese until it’s melted into the soup. Season with salt and pepper. Garnish each serving with a sprinkling of red bell pepper.

Putting whatever I want on a pizza


When I was a kid, I always wanted to try taco pizza. Mom and dad, in an attempt to get everyone to eat their dinner, went the classic route when ordering pizza, opting for more family-friendly toppings like pepperoni and mushrooms. Tough times, I know.

Recently seeing a friend’s Instagram photo of a black-bean pizza reignited my interest in this combination of two of my favorite foods, and here’s what I came up with. Not necessarily original, but quite delicious!

Taco Pizza 
1 tablespoon olive oil
2 tablespoons minced garlic
½ pound ground chicken
1 cup red enchilada sauce
White pizza dough (I buy it at Trader Joe’s)
1 cup refried beans (I used black refried beans)
2 cups grated sharp cheddar
1 cup medium black olives
1 red bell pepper, diced
Green onion and cilantro

Preheat oven to 450 degrees.

Warm olive oil in frying pan over medium heat. Add garlic, stirring occasionally, for a minute or two before adding ground chicken. Once the ground chicken is thoroughly cooked, stir in enchilada sauce and remove from heat.

Evenly coat pizza pan with a little kitchen spray so the dough won’t stick. Roll out dough to desired thickness and place on pizza pan. Bake dough on its own for 8-10 minutes (I like to do this to help crisp up the crust). Spread refried beans all over the dough before adding meat and sauce. Top with grated cheese, olives and bell pepper, and bake for another 15-20 minutes, until cheese is nice and melty. Garnish with green onion and cilantro.

Getting saucy with baked potatoes


We’re not big baked-potato people, but every once in awhile a spud topped with all kinds of goodies sounds amazing. The next time you get a hankering for a baked potato, give this low-maintenance meal a try.

BBQ Chicken Baked Potato 
2 chicken breasts
2 cups Kansas City-style barbecue sauce (this was enough sauce to cover the chicken in my little Crock-Pot)
2 tablespoons dried minced onions
4 russet potatoes, baked to your liking and split lengthwise
Garnishes: shredded cheddar and sliced green onion

Place chicken breasts, barbecue sauce and minced onion in slow cooker. Cook on low setting for 8 hours. Remove chicken from slow cooker and shred meat with knife and fork. Return meat to slow cooker so the chicken gets nice and saucy. Top each baked potato with a heap of shredded chicken and garnish with cheddar and green onions.

May 2 Salad


It’s not the most original, but taco salad is a favorite of mine. This one begins with baby greens upon which I heap all kinds of goodies like seasoned ground turkey, sharp cheddar, corn, red bell pepper and pinto beans. A toasted flour tortilla cut into quarters adds some more crunch. The salad’s ready to go after a quick drizzle of my absolute favorite store-bought salad dressing, Briannas Special Request Santa Fe Blend.
